- 1 scoop protein powder (I usually use PhD Diet Whey in Belgian Chocolate because it tastes nice)
- 1 large egg or 2 medium eggs
- Splash of milk
Method
- Blend all your ingredients. I use a nutribullet which takes about 10 seconds to blend up because it is so powerful but any blender will do.
- Make sure your mixture is a medium to thick consistency because when it comes to cooking the pancakes in a pan, it is a lot easier to cook (you won't burn your pancakes). If the consistency is too runny, add more protein powder (a little bit at a time). If your mixture is too thick, add a tiny bit of milk until you come to a consistency you are happy with.
- Heat up your pan. Use a non-stick pan if possible!
- Add a bit of coconut oil or use a bit of spray oil
- Pour your mixture into the pan
- Cook one side until the mixture starts to form lots of bubbles and then you know its time to flip the pancake. Cook the other side for 30 secs to 1 minute or until it is ready.
- Repeat the process for the remainder of your mixture.
- Add your toppings - I usually go for a selection of berries and a whole banana.
